This weekend we took two Sun Cook solar ovens off to our local community garden and enjoyed a weekend of baking! Here are a selection of photos and a menu of the food that we enjoyed. These recipes are perfect for cooking at home, or for your next camping trip as yummy goodies for everyone.

Summer is the perfect time to be using the Sun Cook Solar Oven.

Here's a selection of tried and tested solar cooking Christmas Recipes
4 apples, such as Golden Delicious or Granny Smith
1/3 cup of sultanas or other mixed fruit
2 tablespoons brown sugar
1 teaspoon mixed spice
Icecream, custard or yoghurt to serve
1: Preheat the suncook by opening it and orientating towards the sun (preheating is optional but will reduce cooking time)
2: Use a small knife and remove the inside core from the apples - leave the apple whole and the base intact
3: Drizzle a little lemon juice inside each cored apple and place upright in the Sun Cook baking tray
4: Combine sultantas, vanilla essence, sugar and spice in a bowl, and spoon mixture into centre of each apple
5: Cover with foil and place in the solar oven for around 30 minutes, depending on sunlight. Remove foil and continue baking another 30min or until tender.
Serve warm with icecream, spooning any liquid over the cream. Enjoy!
Easy choc Christmas cake
This has to be the easiest Christmas cake in the world! It does remain quite moist so you made need to take care taking it out of the pan.
1kg mixed dried fruit
2 cups of strong black coffee
150g fruit and nut chocolate, roughly chopped
2 cups self-raising flour
1: Soak the fruit in the coffee overnight or until tender
2: Preheat the suncook by opening it and orientating towards the sun (preheating is optional but will reduce cooking time)
3: Mix together the fruit mix, chocolate and flour
4: Grease and line the Sun Cook tin and spoon in batter
5: Bake in solar oven for around 1 hour, until the cake is spongy to touch
Jam is a great Christmas gift and good way to make use of any fruit trees in your neighbourhood that are fruiting.
Add 50% chopped and cored fruit to 50% sugar and place in Sun Cook pot. Leave for around 1-2 hours, checking and stirring occasionally.
Roast Chicken and vegetables
The Sun Cook does a magic job of a roast and veg. Place the roast (a whole chicken, leg of lamb, kangaroo etc) on the baking tray and surround with peeled roughly chopped vegetables. Leave for between 2-3 hours, depending on sunlight. Make sure meat is cooked through before serving. Merry Christmas to you!
