Surface is not very smooth containing ridges, omelette stuck like Sh#t to a blanket. requires heating slowly to allow heat to build up not to crack pan. There is a reason they moved away from cast iron. Far better non stick surfaces around like the Tefal. My Seasoned Cast Iron Pans perform much better.
