Curry recipes as good as or even better than I've had in Leicester, UK. The curries in Leicester are really good. I discovered that curries don't need to hit you with spices. They can be really subtle. I've made the biryani. It was amazing. Best to make a double recipe and freeze the leftovers. Grinding the spices in a mortar and pestle is a lot of work, but the result is worth it. I have the leftover curry sauce, next day, with a roti. Absolutely amazing. It's impossible to get a good curry where I live in Brisbane, Australia. I've been told our population is not big enough to attract good indian chefs. Pity. Have to cook your own or fly over to the UK. This is where a good indian cookbook can be your saviour if you can't get to Leicester.
