Once you get the hang of their method, making delicious, healthy bread is so easy, and the variety of recipes means you will never get bored. I loved the first edition, and this update is even better. They kept my old favorites and added some new variations of some of the recipes, some new recipes using different kinds of wheat (like emmer and spelt), and adjustments to the recipes based on reader feedback. They even included adjustments in case you choose not to use the vital wheat gluten most of the recipes call for -- this tip was not in the first edition. The only reason I didn't give it five stars is because I wish it had more 100% whole grain recipes (there are only a handful), or at least a section in the intro for how to adapt the other recipes (most of which have at least some white flour) to 100% whole grain.
