Used at work by a very experience...d pro chef (son). Excellent quality as expected. The Ikon series is well ahead of the standard Classic series. Relatively lightweight, razor sharp blade, close to highest hardness available (you will probably pay above $450 for the next level of hardness and never really necessary IMHO, especially for home use). A smallish bolster so for pro use rather than domestic use, I suggest that you buy the Wusthof Classic with the large bolster if you are untrained and using at home. Be aware that the Classic Ikon handle has an oval cross-section, preferred by many chefs as it can avoid callouses, but it is unlike a standard chef's knife. The Ikon is definitely one of the best 20cm chef's knives available for under $250 - very highly recommended.

Bought this to replace an identical knife... where the tip of the knife unfortunately broke off when trying to lever off a slice of ice-cream cake ( I could have cried as I had the previous knife for nearly 25 years). Replaced with the same knife because they feel so good in the hand, beautiful feel and if anything this is a bit better as the handle feels nicer than the previous one. I love Wusthof knives and have them for all my serious kitchen work.
