Good knife. Great alternative to tojiro or even togiharu
10 of 10 found this helpful Even in a semi professional kitchen this knife functions well. The balance is just behind the blade to my liking and the lightweight is nice. My only complain is that it doesn’t hold an edge as well as I’d like it to. After 5 hours of prep work I would consider it dull. But it is easily sharpened on whetstone.
