About this product

Product Information

'My object in writing this little book is to show you how you may prepare and cook your daily food, so as to obtain from it the greatest amount of nourishment at the least possible expense; and thus, by skill and economy, add, at the same time, to your comfort and to your comparative slender means.' First published in 1852, Charles Elme Francatelli's Plain Cookbook for the Working Classes features 241 recipes suitable for small budgets. • 'Let them eat offal'

As a piece of political/economic history it tells us how little has changed in the attitudes of the 'comfortably off' to the poor and to poverty itself. Completely tone-deaf to any hint of irony. Jolly advice from the corpulent to the starving. Praise indeed to the ordinary folk of the times from whom these 'make do' meals where pillaged by the author. A curiosity I enjoyed reading and I will be making Barley water.

  • A fascinating read

This book is a fascinating read as it covers a wide variety of recipes from an era that is long since passed. By example, there are many recipes for all kinds of meat products that we (mostly) nowadays would turn our noses up at and refuse to eat. The only concern I would express is "authenticity" because this book was not produced as a record of what "poor people" were cooking and eating, rather it's a book of what a "rich person" thinks the poor people should be cooking and eating. This makes me wonder if part of the motivation for the book is good old Victorian social engineering.
