The knife holds its very sharp edge well and has a lovely flex, allowing for the removal of skin from fillets effortlessly
This knife feels well balanced in my hand. The blade has a nice flex that allows it to be worked around the bones when filleting big or small fish. It effortlessly removes the skin from a fillet. The blade holds its sharp edge very well after months of use.
