Importato dalle Americhe insieme alle "cugine" patata e melanzana, il pomodoro fu tenuto a lungo lontano dagli orti e dai fornelli e usato piuttosto come pianta ornamentale, fino a quando, agli inizi dell'Ottocento, cominciò pian piano a fare il suo ingresso in cucina. E fu il trionfo: non solo ne godettero spaghetti e maccheroni, ma potè finalmente esser sfornata la prima pizza margherita della storia, preparata appositamente dal suo creatore per la regina di Savoia. Che l'episodio sia realmente accaduto o sia solo una bella favola moderna, resta il fatto che la strepitosa focaccia "ca' pummarola 'n coppa" ha varcato da tempo i confini italiani ed è oggi uno dei cibi più consumati in assoluto.
