I have been making cheese at home for over 10 years (more frequently in the last 4 since acquiring a family cow) and have a number of home cheese making books. This one is head and shoulders above them all. The recipes are written with consistency and are easy to follow. There is a bit of history with each cheese and suggested recipes for serving. But the biggest improvement over other home cheese making books is the general cheese making theory, ingredient details, and cheese aging information in the beginning of the book. An excellent book for the beginner as well as the seasoned home cheese makers. Thanks to the author for writing it!
