I'm no culinary mastermind but I do know a thing or two about cooking. I've used the book before I just never purchased a copy until now. The techniques and knife skills in this book are amazing. For all you east-coasters, you can check out his tv program by the same name, that will give you a live demonstration of the techniques used in the book. Although the illustrations aren't the best, you can definitely get what he's talking about. Each recipe/technique is broken down into several illustrations. Understanding the book, as long as you have some sense of a kitchen, is simple. Great book for $11.00 on ebay, buy it new at barnesandnobles for $40.
Love this book, although I wish they would update the images to color and/or higher res image quality. They're kind of washy but you can follow them easily. (maybe I'm a little spoiled because of all the wonderful images that are routinely offered in cookbooks now) What this book lacks in spiffy images, it more than makes up for in clear instruction. You will learn how to do anything and everything. This along with Martha's Cooking School and Julia's Way To Cook and you're set for life.
