Simply Superb
I am an ex-chef who bought this book for his son who wanted to learn more cooking techniques. Cannot think of many cooking techniques that aren't in this book. The photos of the techniques being performed are BRILLIANT. The approach of using one recipe to illustrate each cooking technique is SO GOOD. I was so impressed with the one I bought for my son, I bought one for me too.
