  • Theory and Practice of Good Cooking is appropriate not a recipe book per se.

    The book is a bit dated and the recipes are OK, but the philosophy, theories and practice are the real content. The book is unique in providing "ways" of cooking adaptable to various cultures and ingredients. The book is enjoyable reading rather than and index of recipes and ingredients that provides a framework for independent experimentation and cultural investigation. It is a good book for understanding principles shared by every culture.
