A true SG2 kife. It was sold as a factory 2nd but I am unable to find any flaw. other than the xxxx mark etched onto the blade. Even this is barely noticeable unless you look for it. Came supernaturally sharp. I have some other Japanese knives (A Miyabi BirchWood, Miyabi Kaizen, and a Shun Classic) None of those can hold a candle to the Hiro. There is a very noticeable difference in the blade quality. The Hiro just takes and holds a much keener edge than any of the above. The Miyabi BirchWood is supposed to be also SG2, but does not come near to the blade quality of the Hiro. Not sure how this is possible, maybe there was a heat treating problem with the Miyabi. I sharpen these knives the same way on an 8000/3000 grit waterstone , with a leather strop finish, but I just cannot put as good an edge on the Miyabi as I can on the Hiro. The Hiro has a bit of heft to it compared to the shun classic. Truly a cut above. :-)Read full review
