My half and half loaves have been coming out like bricks for the last few months, I don't know why. I decided to try this stuff and see if it made any difference. I measured all the ingredients and weighed the water as usual and put a tea spoon of this powder in too. It takes 3 hours and 40 minutes for wholemeal in my tower bread maker. The loaf rose until it was touching the lid and never dropped. It turned out great.
