About this product

Product Information

In search of the perfect curry - the very best recipes that India has to offer. Whenever I hear the word curry, I'm filled with a longing for spicy hot food with the fragrance of cumin, cloves and cinnamon. I see deep red colours from lots of Kashmiri chillis, tinged with a suggestion of yellow from turmeric. I think of the tandoor oven, and slightly scorched naan shining with ghee and garlic. When Indians talk of their food, they talk about their life. To understand this country, you need to understand curry. What makes a good curry? Sensual spicy aromas or thick, creamy sauces? Rich, dark dals or crispy fried street snacks? Rick journeys through India to find the answer, searching this colourful, chaotic nation in search of the truths behind our love affair with its food. Chefs, home cooks and street vendors hold the key to unlocking the secrets of these complex and diverse flavours - and Rick's travels take him to the heart of both their long-held traditions and most modern techniques. He uncovers recipes for fragrant kormas, delicate spiced fish and slow-cooked biryanis, all the while gathering ideas and inspiration for his own take on that elusive dish - the perfect curry.

    Restaurant standard dishes

A fantastic book. Clearly written with attractive pictures, and the pages are good quality paper. I have tried several recipes and the results of the curries have been better than most of the restaurants I have eaten at, and I have sampled many Indian restaurants over the years. The recipes are not too complicated once you have assembled all of the spices, and you will need many spices to faithfully reproduce the recipes, so expect to have a large pantry of spices. Well worth it though. The odd cooking tip is helpful too, like using beetroot powder instead of food colouring to colour a tandoori dish. The thing about cookbooks is if you look at a recipe and it looks too complicated you tend not to bother. The recipes aren't overly complicated The several curries I have cooked have been ...

  • The genuine deal

There are a lot of cook books out there but not all have genuine and authentic recipes in them. Rick's book gives a great variety of curries and you know they are the real deal. Especially when you have seen him make the dishes himself. It inspires you to have a go. To all, Happy eating! Kind Regards, Helen
