Ken Forkish goes into all the fine detail about bread making allowing you to keep to the detail while doing your own thing without getting lost. Its a great book written very well for people like me who finds difficulty with too much precision. Reading the book is inspiring and encourages you to get going with your bread making. I don't usually review things ever, but this book was amazing. Clear straight forward instructions and the results are sublime, professional grade bread on the first attempt. The production and editing in some places are quite unfortunate, weird boxes to highlight information that interupt the flow of the instructions and leave you flipping between pages to align pictures with explanation. The sample baking schedules are inspired and allow you to plan ahead easily I went straight for the white bread with 80% poolish and to date it is the best recipe I have completed from the book. The crust flavour is another level. I am yet to try the sourdoughs but am sure they would be phenomenal. Done every brea recipe from this book. Turned around my sourdough making from average to brilliant. The whole method is written out for every recipe - whereas other similar books keep referring you back to a generic page of whichever stage you are at.
