You honestly set the predetermined temps simply by pushing the button and letting it do its work. Each and every time we have used this, or the same companies products for rice making, we have never had anything short of perfect rice. Along with the cake making functions and as previously mentioned, other meals are capable of being made with the help of this great rice maker. So if you are on the fence or unsure about the quality we can assure you that we have used this brand and now this particular model, long enough to prove consistently that this still is the best rice maker out there, even if a little pricey! We bought this rice cooker used, but in great condition. We bought some bulk sushi rice and followed the washing and water level instructions, and the rice came out perfectly cooked. No excess water, no crunchy bottom, no uncooked rice on top! The time adjusted as the rice cooked, and kept it warm after the cooking cycle. We can’t wait to try more rice types and the cake and settings!

That's a lot of tech packed into a machine to steam rice. It works really well though. Only complaint is that some of the older models had a superior non-stick surface that was extremely durable and required a simple wipe to get clean. The tempetation with this one is to scrub (which is a bad idea). But this is a minor quibble. It's an awesome device.
