      Witley can be a little zealous as describing slow baking as the one true good style of bread making. Even as a slow baker I thought the argument was a little unbalanced. Yet that is the only criticism of a fantastic book with plenty of personality and a great guide to anyone who wants great tasting bread as healthy as it can be. Also, he shows just how easy sour dough can be (make a sour and tend to it for 2 minutes a day for a week, then use and refresh once a week when you bake). Best bread making book I ever read.
