Throwing out surplus starter is wasteful and not really necessary to keep it alive. Refresh it out of the fridge before baking for a few days, then take some off again to store in your fridge.

I have received the package with the starter with a label stating usage carefully follow corresponding instructions however I have not received any information on how to use keep and feed the starter.
