The DP3 series has a 3 layer blade, the cutting edge being a core of high cobalt alloy steel. The western style handle is made of a recycled timber product that is food safe, has a warm feel and is wear resistant.
it's my first Japanese knife. i didn't want to spend too much just in case it's too sharp and i can't handle it. it is very sharp, but the Western handle is comfortable. it's sharper than Mercer MX3 out of the box (i have the santoku). so i use this Tojiro petty to make salmon jerky (skin on), even though it's shorter.
bolster is a bit sharp, spine is not curved. i used fine wet and dry sandpaper to soften the edges a bit.
there's a tiny gap between the bolster and the handle on my knife.
my purchase was in Feb 2021. it came with English instructions.
ideal utility knife for the small jobs in the kitchen. I like the balance as it is quite weighty in the handle which, to me, gives a good feel. Blade is not too thick so will be easy to keep its angle well for sometime after many sharpenings
