Shun Sora Combination Honing / Sharpening Steel
You've got to use conventional stones and techniques to set the edger of a knife. But, to maintain that edge this steel is the way to go. It'll bring a rolled over edge back up straight in nothing flat and keep it that way until the edge is damaged or worn to the point a fresh stone sharpening is required.
