This is basically what I was looking for, but most recipes are high in fat. I appreciate the history in the book about spelt and learned some things. I also am fairly good at adapting recipes to either be lower in fat or use healthier fats. I was hoping to not have to go thru the time or trouble to revamp the recipes. Technically I would give it a 3.5, I learned some things and got some ideas.

This cookbook is very thorough about the history and use of the ancient grain spelt. More wholesome than today's modern wheat. The fact it covers virtually all areas of cookery make it invaluable for one who wishes to eat healthier.
