I've always been against these drag style sharpening systems as they can bent the metal fibers on the edge. I've used the cheap ones prior with minimal success. Traditionally I use a whetstone, which is slow and tedious work. When I saw Victorinox making this system for their knives I thought I would give it a try. After a quick sharpen on my main two carving knives I was surprised how quick they removed material, but also left a nice felling edge. My wife used one of the knives later that day, without knowing about my new sharpener, and commented that I must had just sharpened it and it feels better than normal.

If your not real experienced using a sharpening steel, these Victorinox sharpeners are a good option. They enable a consistent even degree of grinding along the entire cutting edge. I personally found my technique with a sharpening steel was wearing more prominently into particular areas of the blade edge, but with the Victorinox, it’s consistent. No doubt, experienced use of a sharpening steel will produce better results, but for regular household knife maintenance, the Victorinox is a good option. However I have found they only last about 3 to 4 years with monthly usage, whereas I suspect a sharpening steel will have a longer service life.
