Hi there.
At Tony's we make our handmade fudge in a registered kitchen using a variation of my grandmothers original recipe.
My grandmother would make her fudge on a wood burning stove during and after WW2 when confectionery was scarce in the town, and would sell it to the local store.
Our fudge is cooked to a high temp so some caramelisation always occurs even with the lighter coloured fudges and coconut ice, unlike the bulk produced commercial fudges where essences and colourings are used to create the various flavours. So our fudges can vary slightly from batch to batch.
