This is an excellent reference book for those cheese enthusists who want to know more about French cheeses. This book lists over 350 cheeses; the area in France that the cheeses originate, the type of milk used (cow, goat, sheep or combination), specific characteristics of the cheeses ( taste, texture, finished size and weight), typical aging requirements , special preparations for the rinds, wine that go well with the cheeses, great pictures and much more. This book could have been titled " A Field Guide to French Cheeses". A must book for those who love cheeses.
