Great Place to Start on Fighting Diabetes and Heart Disease
1 of 1 found this helpful Dr. Neal Barnard is well known for his previous revolutionary book, Dr. Neal Barnard’s Program for Reversing Diabetes (through a vegan diet). This first book also provides lots of recipes.
In this book “the get healthy, go vegan cookbook “ written by Dr. Barnard and Robyn Webb they explain how the foods we eat contribute to diabetes and heart disease and, contrary to popular belief, they make the argument for being vegan. He provides a simple blueprint for becoming vegan. He shares 125 easy and delicious recipes to start you on the road to weight loss and health.
Because of my love for animals I have always had a difficult time eating other beings. I was raised in a “meat and potato” culture and after seeing how chickens were raised in cramped, inhuman and filthy conditions I stopped eating chickens at 16. I then became interested in finding out more about the foods on our table. Seeing how veals were raised and the cruelty involved I gave up all animal products for a year. Unfortunately, I did not worry about the nutrition aspect and became very ill due to a severe lack of protein. The doctor convinced me that I could never get enough protein and I went back to eating animal flesh. For years I battled with guilt feelings and went back and forth being a vegan. I never wanted to learn how to cook and I was never able to make that commitment. Now many years later and pre-diabetic I have to try and succeed for family, all sentient beings and myself. I have resigned myself that one cannot become vegan and exist solely on vegetable pasta and prepackaged frozen vegan meals. So I purchased the one pot which along with Dr. Barnard’s recipes will enable me to be vegan for the rest of my life. I’ve already started with easy recipes and it’s just a matter of getting accustomed to shopping healthier and having a few stock items in hand. Contrary to popular belief, if you cook your own meals you will actually save money as you will be eating legumes, grains and tofu which are a lot less per serving than steak or even chicken. You can buys vegetables at farmer’s markets or the less expensive super market chains. Buying in season also saves a lot as do canned vegetables. For me, the only canned vegetables I like are mushrooms and peas. I also keep cut potatoes in case I’m in a pinch. I do eat the potatoes sparingly.
I highly recommend this book for newbies and vegans alike that want to find healthy food options.
