All-in-one computer

I have used an HP laptop for many years and find the new computer is easy to set up and use. However, I am disappointed that although the computer has Windows 11 I am told that I have to purchase Microsoft 365. This is a system I do not want to use. I am having great difficulty in linking my Epson printer to the computer - I will work on this and hopefully resolve the situation.
