Secret weapon for baking
The baking steel arrived at lightening-fast speed and performs perfectly. I tried it today to make gluten-free chocolate-chip cookies, which are notorious for turning out so-so. The result was cookie perfection: crisp but chewy cookies. I loaded the cookie dough onto parchment paper and slipped it on top of a fully-heated steel (one-hour preheat). I used the recipe found in the America's Test Kitchen cookbook, How Can it Be Gluten Free? I followed the recipe and temperature precisely. I've used this recipe before, but using the steel made all the difference. Dough-Joe makes an amazing product, dinged or not!
