Skip the class and read the book
This book has so much information, and is very easy to follow. I have been reading it like a novel as well as a textbook because I am learning a great deal and it is extremely interesting. It's all about spices and liquids and starches and what goes with what. Very happy that I won this book on Ebay!

Chef's companion
This is now the first book I reach for!!!
I was watching America's Test Kitchen, and the host mentioned it was an essential book to have in your kitchen. I bought it, and I agree.
I read it like a book, as Beard tells you where the recipes originated, and the many variations you can use to your liking. I have made many dishes already; each one has been delicious. Highly recommended!
