spicy cake flour
Mesquite flour adds a spicy quality to cakes. When used as a substitute for all purpose flour, it adds a cinnamon, ginger quality to a cake. It contains no gluten, so it can be used in a gluten-free diet. Because of this the cake does not stay together. By the next day it holds together better. It enhances flavors like chocolate or apple that benefit from spices like cinnamon or ginger. I often combine it with almond meal and potato starch. It makes a dark colored cake because it is amber colored.

The book has many great recipes throughout CD.There is a recipe for chocolate babka that looks just like my grandmother’s.
