The Complete Book of Breads Hardcover Bernard, Jr. Clayton
    10 July 2022
    Informative, Entertaining Bread Book
Outstanding recipe resource for any bread-making enthusiast. It is both an incredibly informative and entertaining read. The book is 559 pages, with 22 chapters of bread recipes organized by type (Beginning, White, Bran, Whole Wheat, Rye, Barley, Corn, Buckwheat, Oat, Blended Grains, French, Starters, Sourdough, Salt-Rising, Festive, Cheese, Potato, Vegetable, Spice, Fruit and Nut, Little and Special Breads). Each chapter has an introduction to that type of bread - and each individual recipe begins with the author's brief anecdotes concerning the provenance or history of that recipe. Some of these are quite fascinating - even humorous. An example from the recipe for the Turnipseed Sisters White Loaf: "Two elderly spinster sisters, Ola and Minnie Turnipseed, legends as cooks in Northern Indiana (RFD, Monticello), have been cooking and serving dinners for guests in their kerosene-lit farm home for more than thirty years. This is an adaptation of the big loaf of white bread they bake in a wood and corn-cob burning range stove in which they do upwards of 800 loaves each year. The Turnipseed loaf is leavened with a fresh starter made with hops. The hops 'start' used by the sisters has been alive and working since 1940" (the author even includes the recipe for their hops starter in the "Starters" chapter). These alluring little vignettes further compel you to try out the recipes. I would highly recommend this lovely compendium of bread recipes to anyone who loves making (and eating!) homemade bread. You will not be disappointed.
