A good book getting us eating more veg.

I am not vegan or indeed vegetarian but i love cooking with spices and wanted my family to eat less meat. I have cooked several of the recipes successfully. I have made the veg curry 'pie' twice and it went down brilliantly. It says serves 4 but finished by 2 hungry children. The recipes are healthy as typically use little fat and lots of veg and pulses. Recipes are explained well and photos provide good examples of what meals should look like.
