Excellent unit, but advertising is misleading. Expensive solution.
Does a great job sharpening my knives. My blades are really very sharp. You MUST read the instructions carefully and follow them exactly. If not, you will not get great results. Have converted my 18 degree knives to 15 degrees, so they are sharper. The Trizor edge created by the sharpener wears very well and is easy to keep really sharp with a ceramic hone between sharpenings, hence minimising how often you nee to use the sharpener, and hence loss of metal from the blade edge. So your knives will last longer.
Saw the 2100 advertised as having 15 degree edge sharpening (the Trizor XV is also 15 degrees) , but then found that it is supplied standard as 20 degrees and needed to buy a whole separate accessory sharpening module to get the 15 degree edge. Advertising is misleading as it implies that if you have a 2100 you can choose between 15 degree and 20 degree edges. Yes, you can choose to get a 15 degree edge IF you pay for a whole separate accessory sharpening module (costing more than many other sharpeners) and replace the standard 20 degree module supplied. They should sell the 2100 model with a choice of 15 degree or 20 degree sharpening module, or as a 15 degree or 20 degree sharpener from new (ie supplied as a 15 degree or as a 20 degree sharpener.Read full review...
