Sharp= It is now. Edge at 18 to 20 degrees with 1200 grit diamond and leather strop with fine white aluminum oxide. Polished edge. Creamy feel when cutting.

This knife is perfect for the kitchen. Most simple paring jobs are easily handled with this. I like the feel and the authority it has when used. It takes an edge easily. I purchased two of these now.
