If you or someone you know has gluten allergies then you need to get this book by Carol Fenster, PH.D. It doesn't need to be difficult anymore living gluten free and still having delicious meals. Dr. Fenster is one of the premier authorities on gluten free cooking and in this book you will find "planned-overs" that will use elements from one meal to help you prepare your next days meal, or even meals weeks in advance. Make ahead mixes and techniques will help shorten your baking time. There are comfort food like chicken pot pie, macaroni and cheese, and even desserts like chocolate chip cookies, Tiramisu and top-crust apple pie. Dr. Fenster has been gluten-free for almost 20 years! She understands what it means to cook delicious meals that are not only healthy, but safe to eat. I like the tips given also....like, gluten batter is wetter than normal dough so it can rise correctly....smaller pans produce better results....nonstick pans brown the crust more evenly and it is best to begin with a cold oven for smaller bread items.
