Excellent all-purpose strain

When used properly this strain is a monster. I have become a brewing addict over the past couple years and in the winter when I do not have access to affordable fresh fruit I have found that some frozen juices make pretty decent wine. They clear up really quickly and do not need much aging to taste OK. This is the strain I use when doing so. It can handle the fructose that most delicate strains of yeast give up on. Not to mention it does so very quickly. With a SG over 1.1 this strain will ferment the frozen juice and clear out in around 10 days. Pretty remarkable. I dont even use campden on those batches bc it ferments before any spoilage can occur. Just sanitize, dump the frozen concentrate in my fermenter, add warm water and bring it up to temp, add my nutrients and energizer and sprinkle a couple packets of this on top. Nutrients and energizer are a MUST with frozen juice from the store. This strain is not recommended when making wine from fruit as it leaves none of the 'essence' in the final product. It is just really good at turning sugar into alcohol :) and thats about it, but it does so very quickly and can tolerate higher gravity fermentations. Would possibly be suitable for distilling and isnt nearly as rough as a Turbo strain. Like I mentioned, I use it for a particular frozen concentrate recipe that I have almost perfected and it works very well in this scenario where other strains, including K1V, give up about 2/3 of the way through.Read full review...

Very Fresh date code on package was 02/2022 and if stored in a refrigerator it will easily last another year in my experience. My favorite wine yeast! If you are looking to buy this then you already know that it can reach 18% abv, where others only reach around 13, and bread yeast maybe 10 tops. It can also restart stuck fermentations from other yeast that reached their limit at a lower ABV (if there are sufficient nutrients in the must). Very highly recommended! A great Mead yeast which feeds on the honey very well. It thrives on honey and yields pretty high percentage at about 18. Can be pushed further with some wit and tlc. LALVIN EC-1118 wine yeast

Have been using this yeast for years.Though it is targeted at fruit and white wines, it works well for mixed-juice red wine as well. This is a very energetic, hearty yeast which works better in cold conditions than any other wine yeast I've tried. It can resist and overcome airborne yeasts that might infect other fermentations.
